Pav Bhaji
Pav bhaji is a very favorite fast food dish in India originated in Marathi cuisine. Pav is buns and bhaji is the mixed spicy vegetables.
Preparation Time: 1 Hour
Ingredients Needed:
For Bhaji & Buns(Pav):
1) 2-3 medium size potatoes, peeled and diced.
2)1/2 cup peas
3) 1/2 cup chopped carrots
4) 1/2 cup chopped cauliflower
5) 1/2 cup green beans
6) 3 Tbsp oil
7) 3 Tbsp butter
8) 2 green chilies chopped
9) 3 medium chopped tomatoes
10) 1/2 Tspn red chili
11) 2 Tspn salt (according to taste)
12) 1 Tspn garam masala
13) Pav Bhaji Masala (can get it from any indian store, I prefer the "shaan or MDH" brand.)
14)1 Tbsp lemon juice (If you are not sure about a lil bitter taste in the bhaji, you can add it later on before eating in your serve.)
Garnishing:Serves:- 3-4 people.
1) Lemon Juice- 1 Tspn
2) 1/4 cup chopped cilantro
3) 1 cup dinely chopped onions
4) 2-3 finely chopped green chilies
Procedure:
Bhaji:
Boil all the veggies ( peas, carrots, cauliflower, green beans ) in 1 cup of water with the potatoes. Also put half Tspn of salt and 1 Tbspn in the veggies before boiling (Salt helps the veggies to cook fast). After the veggies are tender turn off the heat from the veggies. Heat the oil in a different pan on a medium heat. Add tomatoes, green chilies, cilantro, and ginger and sauté for 2-3 minutes until pasty. Next add the red chili powder,Pav Bhaji Masala, mix it well. Add salt to it and further add the boiled veggies into it. Mix it well and cover it for another half an hour. Keep checking the bhaji doesn't stick to the pan surface. After half an hour turn off the heat. Add garam masala, and lemon juice, mix it well. The bhaji is now ready.
Buns:
Toast the halves bun over a skillet using butter over medium heat until buns are golden brown from both sides.
Garnishing:
Serve toasted buns with bhaji , garnish with chopped onions and sliced lemon.
Tip: You can add as many veggies you like in the bhaji, e.g- green bell peppers, egg plant.
